how lento started

a walk down today’s grocery aisle makes one thing clear: somewhere along the way, food became unnecessarily complicated.

too many of the products we reach for are filled with gums, fillers, and unnecessary ingredients that have quietly become the norm.

we believe there’s a better way, and that eating better shouldn’t mean giving up the foods you love. at lento, we’re reimagining those familiar favorites with simple, recognizable ingredients and exceptional flavor.

we wanted a tortilla. a real one, the kind you'd actually look forward to.

it started on a camping trip

it started on a camping trip, of all places. we wanted a tortilla. a real one. the kind you'd actually look forward to, and what we had was a bag of something engineered to survive a supply chain. gums, fillers, seed oils, a list of ingredients that read like a chemistry set.

so we went home and started making our own. red lentils, because they cook down into something with real structure and real protein. chia, flax, and psyllium, because seeds do the work that gums usually get hired for. sea salt. not much else.

it took a lot of batches. our chips had to actually crunch. our tortillas had to fold without cracking ... which sounds simple and is not. we're still refining both.

everything is made here in denver, in a commissary kitchen, in batches small enough that we taste what goes out. you'll usually find us on sunday mornings at the south pearl street farmers market, sampling at our booth and asking people what they think!

lento is a family operation: the two of us, plus sherman, who takes his job as chief morale officer extremely seriously.
